Ethiopia: Tej

On this Ethiopian stamp (1982 - 40 c - Mi 1116) is written "TEJ CONTAINER". TEJ is the Ethiopian name for honey wine / mead.

On the website  I have found the following information about tej.

Tej is a popular drink in Ethiopia. It's a kind of mead with a somewhat bitter taste. For the preparation is used a plant with similar effect as hops in beer. Ethiopian tej is made by open fermentation, which starts by itself.

The Dutchman Bijlmakers makes his own tej. His tej is more clear than the Ethiopian and the taste is a little bit dryer (= less sugars). See his website for a recipe.
